Abstract

Objective: To analyze the influence of Burnout on the eating habits of healthcare professionals, explore the physiological mechanisms involved, and discuss the role of nutritional interventions as a strategy to support mental health. Bibliographic review: Burnout syndrome is characterized by emotional exhaustion, depersonalization, and low personal accomplishment, with a high prevalence among healthcare professionals. Evidence shows that chronic stress deregulates the hypothalamic-pituitary-adrenal axis, increases cortisol levels, and promotes inflammatory and oxidative processes that affect both mental health and eating behavior. A tendency toward the consumption of ultra-processed foods, rich in sugars and fats, further aggravates inflammation and metabolic imbalances. Nutritional strategies, including healthy dietary patterns such as the Mediterranean diet, supplementation with specific nutrients (vitamin D, magnesium, B vitamins, and omega-3), and the use of probiotics and prebiotics, have shown potential in modulating inflammatory response, neuroendocrine function, and mental health. Nutritionists play a central role in prevention and management through nutritional education, individualized assessment, and the implementation of institutional programs. Final considerations: Nutrition is a strategic tool to mitigate the effects of Burnout. Further studies are needed to consolidate applicable clinical protocols.
