Abstract
In this study, we analyzed the epidemiology of outbreaks of foodborne illness in Brazil through the review of 20 articles, 1 book and 1 manual published in the period 2000 to 2011 using the variables related to the individual and to the event. The results show that enterobacteria of the genus Salmonella were the most frequent agents involved in these outbreaks followed by Staphylococcus aureus and Bacillus cereus and foods with the highest number of notifications were mixed followed by food products containing eggs and beef. The study presented here coincides with the data from the Secretariat of Health Surveillance where Salmonellosis was appointed as the chief agent of the DTA's.
